One of my best friends brought this salad to our scrapbooking retreat last weekend and it was a hit with all of us! I asked her if I could share it as I am sure all of you will love it too!
Winter Fruit Lettuce Salad
2 bags lettuce or 1 1/2 heads Romaine Lettuce
1 apple, cored and chopped into small pieces
1 pear, cored and chopped into small pieces
1 cup candied slivered almonds
1 cup candied chopped walnuts
1/4 cup craisins
(I candy the nuts in a non-stick pan with about 1/4 cup (or more) of sugar until sugar is melted and nuts are golden, cool on wax paper)
Dressing:
1/2 cup white sugar
1/2 cup lemon juice
2/3 cup veg oil
1/2 tsp salt
2 Tbsp diced red onion
1 Tbsp poppy seeds
Combine dressing ingredients in a sealed container and shake until mixed, toss with salad. You may not use all the dressing.
Hope you enjoy and have a great weekend!
Also, I want to THANK Modern Mom for featuring me as one of their Mom Bloggers they love. It was a great article and I am very grateful to be included in the list. I love the site and am honored to be a part of it.
